Ingredients:
For the dough:
- 800 g (28 oz) all-purpose flour, sifted 3 times
- 150 ml (5 fl oz) warm whole milk
- 3 eggs + 1 egg white at room temperature

- 30 ml (1 fl oz) vegetable oil
- Juice from 1 orange at room temperature
- Zest of 1 orange (orange part only)
- 100 g (3.5 oz) butter at room temperature
- 14 g (0.5 oz) active dry yeast
- 1 tsp salt
- 1 ampule vanilla essence
- 1 ampule rum essence
For the filling:
- 250 g (8.8 oz) loqum, cut into small pieces
For brushing:
- 1 tablespoon whole milk
- 1 egg yolk
For sprinkling:

Instructions:
Making the dough:
- In a large bowl, combine the warm whole milk, 1 tablespoon of sugar, and the active dry yeast. Stir and let sit for 10 minutes to activate.
- Add the sugar, eggs, vegetable oil, orange juice, orange zest, vanilla essence, and rum essence to the activated yeast mixture. Stir well.
- Gradually add half of the flour, mixing until a smooth batter forms.
- Add the salt and the remaining flour. Knead by hand until you have a soft sticky dough.
- Transfer the dough to a lightly oiled work surface and knead until smooth and elastic.
- Gradually add the butter, kneading until it is incorporated into the dough.
- Place the dough in a lightly oiled bowl, coat the dough with oil, cover the bowl with a lid or plastic wrap, and let it rise in a warm place for 2 hours.
Shaping the babkas:
- Once the dough has doubled in size, transfer it to a lightly oiled work surface and divide it into 6 equal parts.
- Shape the dough into 6 balls.
- Take one ball, roll it out into a long rectangle, and place loqum along one end.
- Roll up into a log, pinch the ends to seal, and twist gently.
- Repeat with the remaining 5 balls.
- Braid 3 of the logs into a regular braid.
- Place the braided babka in a loaf pan lined with parchment paper. The pan should measure 32/13/7 cm (12.6/5.1/2.8 inches).
- Repeat with the remaining 3 logs, placing them in another loaf pan.
- Cover the babkas with a clean kitchen towel and let them rise for another hour.
Baking:
- Preheat the oven to 180°C (350°F) without a fan.
- In a small bowl, whisk together the egg yolk and whole milk.
- Brush the babkas with the egg yolk mixture and sprinkle generously with sugar.
- Bake the babkas in the lower part of the oven for about 40-50 minutes, until golden brown.
- Turn off the oven, open the door, and leave the babkas inside for another 20 minutes.
- Remove the babkas from the oven and let them cool on a wire rack.
