Ingredients:
- 2 mackerel, cleaned and gutted
- 2 onions, thinly sliced
- 2 red bell peppers, thinly julienned
- 2 green bell peppers, thinly julienned
- 1 carrot, thinly julienned
- 1/2 bunch parsley, chopped
- 200 g (7 oz) canned crushed tomatoes
- 100 ml (3.4 fl oz) white wine
- 1 lemon
- Salt
- Black pepper
- Allspice
- Bay leaf
- Olive oil

Instructions:
Prepare the fish:
- Cut each mackerel in half along the backbone to separate the fillets.
- Cut each fillet in half.
- Season with salt, black pepper, and lemon juice, and brush with olive oil.
Prepare the vegetable medley:
- Heat a little olive oil in a frying pan over medium heat.
- Add the onions, green and red bell peppers, and carrots.
- Stir and sauté for 5-6 minutes, until softened.
- Pour in the white wine and wait 1 minute for it to evaporate.
- Add the crushed tomatoes, salt, black pepper, allspice, bay leaf, and half of the parsley.
- Stir and add 100 ml (3.4 fl oz) of water.
- Simmer over medium heat for 10-15 minutes, until thickened.
- Transfer the vegetable mixture to a baking dish.
Bake the mackerel:
- Arrange the fish pieces on top of the vegetable mixture.
- Garnish with lemon slices.
- Preheat the oven to 180°C (350°F) without the fan and bake on the bottom rack for 20-25 minutes.
Serving:
- Sprinkle with the remaining parsley.
- Serve hot.
