Ingredients:

  • 2 mackerel, cleaned and gutted
  • 2 onions, thinly sliced
  • 2 red bell peppers, thinly julienned
  • 2 green bell peppers, thinly julienned
  • 1 carrot, thinly julienned
  • 1/2 bunch parsley, chopped
  • 200 g (7 oz) canned crushed tomatoes
  • 100 ml (3.4 fl oz) white wine
  • 1 lemon
  • Salt
  • Black pepper
  • Allspice
  • Bay leaf
  • Olive oil

Instructions:

Prepare the fish:
  1. Cut each mackerel in half along the backbone to separate the fillets.
  2. Cut each fillet in half.
  3. Season with salt, black pepper, and lemon juice, and brush with olive oil.
Prepare the vegetable medley:
  1. Heat a little olive oil in a frying pan over medium heat.
  2. Add the onions, green and red bell peppers, and carrots.
  3. Stir and sauté for 5-6 minutes, until softened.
  4. Pour in the white wine and wait 1 minute for it to evaporate.
  5. Add the crushed tomatoes, salt, black pepper, allspice, bay leaf, and half of the parsley.
  6. Stir and add 100 ml (3.4 fl oz) of water.
  7. Simmer over medium heat for 10-15 minutes, until thickened.
  8. Transfer the vegetable mixture to a baking dish.
Bake the mackerel:
  1. Arrange the fish pieces on top of the vegetable mixture.
  2. Garnish with lemon slices.
  3. Preheat the oven to 180°C (350°F) without the fan and bake on the bottom rack for 20-25 minutes.
Serving:
  1. Sprinkle with the remaining parsley.
  2. Serve hot.
