Instructions:
- Heat a large skillet over high heat and add a drizzle of olive oil.
- Add the beef and cook for 2-3 minutes, or until browned. Remove the beef from the skillet.
- Add the mushrooms to the skillet and cook until golden brown.
- Add the onion, carrot, red bell pepper, and green bell pepper to the skillet. Cook for 5-6 minutes, or until softened.
- Pour in the white wine and stir to combine. Cook until the wine has evaporated.
- Add the sugar and season with salt, black pepper, and thyme. Stir to combine.
- Return the beef to the skillet.
- Add the garlic and scallion.
- Sprinkle with parsley.
- Stir to combine and turn off the heat.
