- 600 g chicken gizzards, pre-washed and cleaned
- 2 carrots, grated
- 1 bunch green onions, finely chopped
- 300 g rice, pre-washed with cold water
- Half a bunch of mint, finely chopped
- Salt
- Black pepper
- Paprika
- Oil
- 500 g yogurt
- 1 egg
- 1 tablespoon flour
- 1 teaspoon baking soda
- 1 liter water

Instructions:
- Cook the gizzards: In a pot, add the gizzards and cover with water. Cook for about 1 hour, or until tender.
- Sauté vegetables and rice: Chop the cooked gizzards. In a preheated pan, add oil, chopped green onions, and grated carrots. Sauté for 1-2 minutes until softened. Add the chopped gizzards and rice. Stir and cook for another 2 minutes.
- Season and transfer to baking dish: Remove from heat and season with salt, black pepper, paprika, and chopped mint. Stir well. Transfer the mixture to a baking dish. Pour 1 liter of water over the mixture and stir to distribute the rice evenly.
- Bake: Bake in a preheated oven at 180°C (350°F) without fan, on the bottom rack, for about 40 minutes.
- Prepare the topping: While the rice is baking, prepare the topping. In a large bowl, combine yogurt, flour, baking soda, egg, and salt to taste. Mix well.
- Assemble and bake: After 40 minutes, pour the yogurt mixture over the baked rice and return to the oven.
- Serve: Once the topping is golden brown, remove from the oven and let it cool slightly. Cut into serving portions and serve.
