Instructions:
- Heat oil in a pan and add the mushrooms.
- Season with salt and black pepper.
- Sear the mushrooms on both sides for about 3-4 minutes, turning them occasionally.
- In a separate pan with oil, sauté the onion for 1-2 minutes, until softened.
- Add the bacon and sauté for another 1-2 minutes.
- Add the chopped mushroom stems, salt, black pepper, and thyme.
- Stir and cook until the stems soften.
- Let the filling cool down.
- Mix it with the grated cheese and parsley.
- Stuff the mushrooms with the filling.
- Bake in a preheated oven at 350°F (180°C) without the fan, on the bottom rack, until the cheese is melted and golden brown.
- Serve warm.
