  • 5.3 oz (150 g) chopped bacon
  • 7 oz (200 g) grated cheese
  • 1 small onion, finely chopped
  • Half a bunch of parsley, finely chopped
  • Salt
  • Black pepper
  • Thyme
  • Olive oil

Instructions:

  1. Heat oil in a pan and add the mushrooms.
  2. Season with salt and black pepper.
  3. Sear the mushrooms on both sides for about 3-4 minutes, turning them occasionally.
  4. In a separate pan with oil, sauté the onion for 1-2 minutes, until softened.
  5. Add the bacon and sauté for another 1-2 minutes.
  6. Add the chopped mushroom stems, salt, black pepper, and thyme.
  7. Stir and cook until the stems soften.
  8. Let the filling cool down.
  9. Mix it with the grated cheese and parsley.
  10. Stuff the mushrooms with the filling.
  11. Bake in a preheated oven at 350°F (180°C) without the fan, on the bottom rack, until the cheese is melted and golden brown.
  12. Serve warm.
